Green Beans are abundant with antioxidants pigments known as flavonoids, which are very useful to human body. Research shows that flavonoids decreases the growth of breast cancer cells and intestines cancers. Viva Green Beans!
Here is a short recipe for making a delicious stew out of green beans:
Ingredients
2 cups green beans, cut into 3 -cm sized pieces
500 g lamb stewing meat
1 cup steamed sweet corns
2 cups potatoes, chopped
2 tablespoons Tomato paste
1 Onion, finely chopped
Oil for frying
Salt and pepper for seasoning
Directions
Set a proper-sized pot on a medium heat and sauté chopped onion in oil. Then add in the green beans and continue sautéing. After 5 minutes add in tomato paste. Sauté and one minute after, stir in the stewing meat as well. Keep sautéing and mix the ingredients well.
Pour in 3 glassses of water, close the lid, reduce the heat to low and give it almost 3 hours till meat is well-done.
After this period, add in, the steamed sweet corns, and chopped potatoes. Season to taste with pepper and salt. Allow 1 more hour till the stew is ready.
Remove to a desired serving dish and serve with rice. You can also serve with fresh Persian bread. Bon Appetit!
